Sautéed Broccoli Gone Rogue

Ingredients
- 8 C Broccoli Florets
- 2 T Toasted Sesame Oil
- 1 C Red Bell Pepper, sliced
- 6 Mushrooms, sliced
- ½ C Yellow Onion, sliced
- 3 Medium Garlic Cloves, chopped
- 3 T Smooth Peanut Butter
- 2 ½ T Soy Sauce
- 2 T Rice Vinegar
- 1 T Brown Sugar
- 1 T Toasted Sesame Seeds
Instructions
- Bring 1 inch of water to a boil in a large pot fitted with a steamer basket.
- Add broccoli to the steamer basket, cover, and steam until tender-crisp, about 3 minutes.
- Heat oil in a large skillet over medium-high heat.
- Add bell pepper, onion, mushroom, and garlic to the skillet.
- Cook, stirring often, until the vegetables begin to soften, about 3 minutes.
- Add the steamed broccoli to the skillet with the other vegetables.
- Stir and cook together for an additional 3 minutes.
- Whisk together peanut butter, soy sauce, vinegar, brown sugar, and cornstarch until smooth.
- Pour the peanut sauce mixture into the skillet with the vegetables.
- Cook, stirring constantly, until the sauce thickens, about 1 minute.
- Sprinkle the dish with sesame seeds before serving.
