Sautéed Broccoli Gone Rogue

Time: 30 minutes

Servings: 6 servings

Ingredients

  • 8 C Broccoli Florets
  • 2 T Toasted Sesame Oil
  • 1 C Red Bell Pepper, sliced
  • 6 Mushrooms, sliced
  • ½ C Yellow Onion, sliced
  • 3 Medium Garlic Cloves, chopped
  • 3 T Smooth Peanut Butter
  • 2 ½ T Soy Sauce
  • 2 T Rice Vinegar
  • 1 T Brown Sugar
  • 1 T Toasted Sesame Seeds

Instructions 

  1. Bring 1 inch of water to a boil in a large pot fitted with a steamer basket.
  2. Add broccoli to the steamer basket, cover, and steam until tender-crisp, about 3 minutes.
  3. Heat oil in a large skillet over medium-high heat.
  4. Add bell pepper, onion, mushroom, and garlic to the skillet.
  5. Cook, stirring often, until the vegetables begin to soften, about 3 minutes.
  6. Add the steamed broccoli to the skillet with the other vegetables.
  7. Stir and cook together for an additional 3 minutes.
  8. Whisk together peanut butter, soy sauce, vinegar, brown sugar, and cornstarch until smooth.
  9. Pour the peanut sauce mixture into the skillet with the vegetables.
  10. Cook, stirring constantly, until the sauce thickens, about 1 minute.
  11. Sprinkle the dish with sesame seeds before serving.
